Game Day Eats

 Date night included BYU football and these yummy treats last Friday. Chocolate Chip Cookie Dough Dip, and Honey Glazed Hot Wings. What girl wouldn't want to cuddle with their hubby and watch sweaty guys pummel each other while these treats were nearby??? There was pizza too, but you've already got my pizza dough recipe... The dip would also make a perfect girls night snack, don't you think? The wings were still spicy, but there was just enough sweetness to keep me going back for more. Enjoy!

 Chocolate Chip Cookie Dough Dip

1/2 c butter
1/3 c brown sugar
1-8oz block of cream cheese, softened
1/2 c powdered sugar
1 tsp vanilla extract
3/4 c semi-sweet chocolate chips, roughly chopped

Melt butter in a medium saucepan, add brown sugar and whisk until smooth. Bring to a boil and let bubble for a minute or two. Let mixture cool, or it will melt your chocolate chips.

Beat cream cheese and powdered sugar with a mixer for 1 minute until smooth. If your cream cheese is too warm, you will have lumps. Add in vanilla. Then, on low speed, add in the butter and brown sugar mixture until combined. Add in most of chocolate and let the mixer break them up. Pour into a bowl and top with more chocolate. Dip with pretzels, green apples, animal crackers, bananas, sugar cookies, a spoon, your finger...


Now for the wings. Jacob usually handles the wings, but this was my first time and I must say, not bad for a girl...

Honey Glazed Hot Wings
Recipe inspired by allrecipes

2lbs chicken wings
salt and pepper to taste
1 c honey
1/2 c butter, melted
1/2 c hot sauce

Preheat outdoor grill to medium heat, lightly brush oil on grates with a paper towel and tongs.

Rinse the wings and dry with a paper towel. Season with salt and pepper. Spread out on grill and cook for about 20 minutes, until juices run clear. Periodically brush 1/2 cup of honey on wings while they cook.

Meanwhile melt butter in a large bowl and mix with hot sauce and remaining 1/2 cup of honey.

When wings are done dump in the sauce and serve with delicious blue cheese. I don't ususally like store bought blue cheese dressing since I always grew up with home made but, I was super impressed with Marzetti's Simply Dressed All Natural Blue Cheese dressing. You can find it with the refrigerated dressings by the produce. Delicious. Go on make your hubby's night.

Shh! We're eating Chicken Enchiladas

My Favorite thing about this recipe is that we made enough for almost 40 people in one hour. And, the kids were finally quiet for a moment on a long rainy day spent indoors.
Here's what you need for one 9x13 pan:

about 3 chicken breasts (more or less if you like)
1 can black beans
1 can pinto beans
1 can diced tomatoes with green chili's
1 chopped small onion
12 smaller-ish flour tortillas
2 8oz cans green enchilada sauce (we used mild)
about 8 oz. shredded mexican blend cheese (Jacob would add much more)
the juice of one lime
Seasoned salt
chili powder
cumin
paprika
garlic powder
  • Cook chicken and shred. (We cooked it mamma dean style in the pressure cooker. It's also really good cooked in the slow cooker with the tomatoes for 4-6 hours.)
  • Place shredded chicken in saucepan with beans, onions, lime juice and tomatoes. Begin adding spices to taste. About 2 Tbsp Chili powder, 2 tsp cumin, 2 tsp garlic powder, 1 tsp paprika, a couple pinches salt.
  • Pour about 1/4 cup of sauce in the bottom of the pan.
  • Fill tortillas with chicken mixture and a few pinches of cheese. Roll up  and place seam side down in the sauce. 
  • Cover with sauce and sprinkle cheese (liberally if you're a true Dean)
  • Bake in 350 degree oven for 20-30 minutes or until bubbly.
