Banapple Cake and Cream Cheese Frosting


This is the cake I have made for all my kids birthday's so far. I like it because it so moist, and not too sweet. It's also somewhat healthy before you add the frosting.

Banapple Cake

2 eggs
2 1/2 cups flour (I use white whole wheat)
3/4- 1 cup sugar (for mamma Dean I did 1/2 c and it was yummy!)
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup mashed ripe bananas, about 3
3/4 c buttermilk (I use half milk, half plain yogurt)
1/2 c applesauce
1 tsp vanilla

Grease and lightly flour two 8 1/2 inch pans, or one 9X13 pan. Preheat oven to 350 degrees.

Mix together flour, sugar, baking powder, soda, and salt. Add bananas, buttermilk, applesauce, and vanilla. Beat with electric mixer on low speed until combined. Add eggs; beat on medium speed for 2 minutes. Pour batter into the pans.

Bake for 25 to 30 minutes for round pans, and 30 min for 9x13. Bake until centers of cake are firm and toothpick comes out clean. Let cakes cool in pans for 10 minutes. Then put on wire racks if using round pans and let cool completely before frosting.

Cream Cheese Frosting
(half this recipe if using 9x13 pan)

1 8oz. package of cream cheese
1/2 c butter, softened
2 tsp vanilla
5 3/4 to 6 1/4 cups powdered sugar
1 tbsp milk

Mix cream cheese and butter on high in mixer until smooth. Add vanilla and gradually add powdered sugar 2 cups at a time. Start slowly!. Add milk, and beat until desired consistency.
